How to make BARBUNIA FISH WITH EŞKABEŞ SAUCE Recipe
- 2 kidney fish fillets
- 1 red tomato paste
- 1 slice of baguette bread
- 1 carrot
- 1 onion
- 1 sprig of celery leaves
- 2 cherry tomatoes
- 1 tablespoon of chopped anchovy
- 10 black olives
- 1 sprig of fresh thyme
- 4 tablespoons of olive oil
- Black pepper

Peel and grate the carrot and onion. Minced leaf with celery. Wash and extract the kidney beans. Clean the red pepper, cut it into two pieces longitudinally and roast it. Heat 2 spoons of olive oil in a pan and fry the fish lightly. Add carrot, onion, celery leaf, thyme, salt and pepper and cook for another 5 minutes.
Heat the olive oil left in another pan. Fry 1 slice of baguette bread and place on a serving plate. Add anchovy and garnish with roasted red pepper. Add the fish to the plate, decorate with black olives and tomatoes and serve.
