How to make CARROT AND GINGER SOUP Recipe

  • 1 tablespoon canola oil
  • 1 onion
  • 1 tablespoon coarse grated ginger
  • 2 cloves of garlic
  • Half a teaspoon of grated nutmeg
  • 5 cups vegetable juice
  • 2 carrots
  • 400 g boiled beans

For the top of it

  • 3 tablespoons of olive oil
  • 1 teaspoon of safflower
  • Coarse crushed almond

Canola oil Put it in a saucepan and heat it. Add onion chopped, grated ginger and crushed garlic and saute for 5 minutes. Add the grated nutmeg and continue sautéing for another 1-2 minutes. Add vegetable broth, carrot and boiled beans, and cook for 20-25 minutes. Pass the mixture through the blender and remove it from the stove. Heat the olive oil in a sauce pan. Add the safflower and mix. Share the soup in the serving bowls and decorate it with coarsely crushed almonds. Serve.
