  • 6 ~ 7 sprigs of basil
  • 2 sprigs of fresh thyme

  • Half red chili pepper
  • Basil

Peel the eggplant variegated and chop it large. Place on a baking sheet with greaseproof paper. Pour olive oil over them and sprinkle with salt and pepper. Roast in a preheated 200 degree oven for 30-35 minutes. Heat the remaining olive oil in a separate pan. Sauté the finely chopped greens and remove from the stove. Put the eggplants, greens, grated cheese, yoghurt and vegetable broth in a large bowl. Blend until you get a smooth consistency. Let it sit in the fridge for two hours. Serve cold with the chili pepper and basil leaves that you have sliced ​​on the ring.
