  • 225 g quinoa
  • 10 cherry tomatoes
  • 25 g butter (at room temperature)
  • 1 red pepper
  • 1 garlic cloves
  • 400 g chicken breast
  • 2 tablespoons of olive oil
  • Half a glass of kalamata olives
  • 1 red onion
  • Juice of half a lemon
  • Peppermint leaves
  • Salt
  • Black pepper

Boil the quinoa according to the recipe on the package and strain and drain well. Cut the red pepper into small cubes and sauté in butter. Grate the garlic and add it to the red pepper. Chop the chicken meat into 2 finger thick strips and brush it with olive oil and cook it on the grill. Put the cooked meat in a tray, put the pieces of butter on it, cover with a lid and let it sit until it melts. Cut the cherry tomatoes in half and put them in a bowl. Chop the onion and add. Add mint leaves, olives, quinoa, olive oil, lemon juice, salt and pepper and blend. Put it in a serving plate and place chicken meat on it and serve it.
