Ingredients

  • 2 belt eggplant

  • 1 tablespoon lemon juice
  • 1 tablespoon starch
  • ¼ bunch finely chopped parsley

After peeling the eggplants variegated, chop and soak in salted water for 30 minutes. After straining the broth, fry in sunflower oil and roll on a paper towel. Take the butter in the pot and heat it. Add finely chopped onion and garlic and sauté. Add the red pepper diced in the form of backgammon and cook for 1-2 minutes. Chop the chicken meat in the form of backgammon, add to the pan and sauté. After the meats are soft, add 4 cups of hot water and leave to boil. Continue cooking on low heat until the chicken is tender. Add the eggplants that you have fried after cooking chicken meat. Add salt and pepper and mix. Mix the ingredients for finishing and gradually transfer to the boiling soup and mix quickly. After boiling for 1-2 transports, remove from the stove. Add finely chopped parsley. Share it in bowls and serve hot.
