  • 2 garden eggplants
  • 3 tablespoons extra virgin olive oil
  • 2 onions
  • 3 red capia pepper
  • Half a bunch parsley
  • 1 tablespoon pepper paste
  • 1.5 cups hot water

  • 1.5 water glass of grated tomato
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon pepper paste
  • 1.5 cups hot water
  • Wash the eggplants and cut them in half, lengthwise from the middle. Apply two tablespoons of extra virgin olive oil with a brush to the cut places and bake in a preheated 180 degree oven for 10 minutes. Take out the inside of the cooked eggplants and chop them.
  • Saute the onion you chopped for edible until the extra virgin olive oil turns pink. Add the paprika chopped peppers, eggplant and pepper paste. Season with salt and spices and remove from the stove. Share the mortar inside the eggplants and put it in a baking dish. Bake the eggplants with sauce in a preheated 180 degree oven for 20 minutes. Serve hot.
